CORN MUFFINS WITH ANISE SEED
Inspired By: Recipe from Parkside Parrot Inn in Portland, ME
Ingredients:
1/2 cup vegetable oil
1 cup milk
2 eggs, slightly beaten
2/3 cup sugar
2/3 cup yellow corn meal
1 cup flour
2 teas. crushed anise seed
3 teas. baking powder
1. Mix oil, milk and eggs. Add sugar and mix well. Mix all dry ingredients together and add to egg mix. Stir until well mixed, but do not beat.
2.Bake at 375 degrees for about 20 minutes or until slightly golden on top.
3.Adjust corn meal to your taste. More corn meal makes for a coarser muffin.
