GREEN PEPPERCORNS
BEEF WITH FRUIT SALSA
Inspired By: Beef with Mango, Raisin and Fresh Tomato Salsa
Ingredients:
2 tomatoes
1 mango
2 oz. Raisins
1 tsp. PureSpice ® Green peppercorns, crushed
1 tsp. Finely grated lemon rind
2 Tbsp. red wine vinegar
1 Tbsp. olive oil
1 spring onion, shredded
1.5 lb. Piece eye fillet beef
1. Preheat oven to 350. Peel skin away from tomato after boiling and lunging in ice water. Finely chop tomato flesh and put in bowl.
2. Peel and finely dice the mango and mix with the tomato and raisins. Mix together the peppercorns, lemon rind, vinegar and oil and add to the salsa. Season and scatter with spring onion.
3. Place beef in lightly oiled roasting tin and cook for 35 minutes in oven. Let stand 10 minutes before slicing.
