Brandied Pepper

Brandied Pepper is one of our most in-demand products. Years ago, Tavern on the Green wanted something different, and for them I created my version of Brandied Pepper. Green peppercorns, always available in Europe, were now available here, and it occurred to me that these might add more mellowness to the blend, so I added them. On a roll, I also added shallots and garlic to create this useful and fine product. Most cooks originally used Brandied Pepper on steaks and standing rib roasts and in salad dressings. It is great on salmon and other fish. I even use it in string beans or in almost any dish that needs a lift.

BRANDIED PEPPER

SPICY MEDITERRANEAN GRILLED SHRIMP
Inspired By: Spicy Mediterranean Grilled Shrimp from www.canbbq.com

Ingredients:

1 lb peeled and deveined shrimp
4 TBSP olive oil
3 TBSP lemon juice
3 TBSP of your favorite red wine
2 tsp PureSpice ® BRANDIED PEPPER
1 tsp PureSpice ® salt
1 tsp PureSpice ® basil
1 garlic clove grated
1/2 tsp PureSpice ® paprika
1/4 tsp PureSpice ® cayenne

1. Blend all the ingredients thoroughly and marinate shrimp for 1 hour. While marinating, start the grill with charcoal to make a medium to hot fire. Allow the grate to become hot and brush the rack with wire brush to remove impurities.
2. Place shrimp on. Cook until firm and don't over cook. This recipe goes great with fettuccini or linguine.
